Ingredients:

Chopped Carrots – 1/2 kg

Sugar – 1/2 Cup

Corn flour – 1/4 Cup

Water – 1 Cup

Ghee – 2 Table Spoons

Ingredients for decorating:

Coconut powder – 2 Table Spoons

Powdered sugar – 2 Table Spoons

Method:

  •  In a cooker, put the chopped carrots and add a little water, bring to a boil until 2 whistles come and take. Once the carrots are cool, put them in a mixer and grind to a paste.
  • Take a bowl, mix sugar and corn flour, add a cup of water and mix well. Then mix it with the carrot paste.
  • Put the pan in the stove and when hot, pour the carrot mixture into it and stir well.
  • Add a little ghee from time to time and stir so that it does not stick to the pan.
  • When the mixture accumulates well without sticking to the pan, spread ghee on a plate and pour the mixture evenly over it.
  • Once it cools down for a while, slice it into the desired shape.
  • Mix the coconut powder and powdered sugar together in a bowl and sprinkle it over the chopped pieces to prepare a delicious ‘Carrot Delight’.

Carrot Delight, prepared in the above proportions, contains 98 Grams of carbohydrates, 18 Grams of protein, 1 Grams of fat, 36 Grams of potassium, 3 Grams of vitamin C, 17 Grams, iron – 1 Grams.

Ingredients:

Rice flour – 2 Table Spoons

Egg – 2 Numbers

Sugar – 4 Table Spoons

Ghee – 3 Table Spoons

Salt – As Per Required

Coconut milk – 1/2 Cup

Method:

  • First add sugar to the eggs and mix well until foamy.
  • Add rice flour and knead well.
  • Then, heat the ghee well and pour over the flour.
  • Once the hand reaches a tolerable temperature, add a little coconut milk and knead the dough for 15 minutes.
  • Leave the dough for half an hour and knead again for 5 minutes.
  • Now, roll the dough into small balls, apply the oil or ghee in the palm of your hand and roll the dough into a circle as you would a pudding.
  • Roll out the dough into a circle and fry in oil, delicious crunchy Madakku Paniyaram is ready.

SPICY MUSHROOM RECIPES

  • Take a bowl, add half chopped mushrooms, garam masala, ginger paste, garlic paste, green chilli paste, corn flour, saffron powder and lightly sprinkle with water.

MUSHROOM FRY GRAVY

Ingredients:

Cabbage – 1/2 Kilogram

Mushrooms – 250 Grams

Ginger – 50 Grams

Garlic – 25 Grams

Green chillies – 2 Counts

Coriander powder – 20 Grams

Chicken masala – 20 Grams

Peanut flour – 75 Grams

Rice flour – 50 Grams

Salt – As Per Required

To prepare ‘Gravy’:

Water – 3/4 liter

Garam masala – 15 Grams

Mutton spice – 20 Grams

Chili powder – 15 Grams

Corn flour- 50 Grams

Salt – As Per Required

Method:

  • Chop the cabbage and the mushrooms into medium-sized pieces.
  • Stir in the ginger, garlic and green chillies together.
  • Add cabbage, mushrooms and garam masala, coriander powder, chicken masala and salt and stir well.
  • Add peanut flour, rice flour and maida flour, add a little water and knead into a paste.
  • Pour oil in a frying pan and when it dries, put the kneaded dough in it and lightly prepare the fried mushrooms with the puri paste.
  • In another frying pan pour 3/4 liter of water, add garam masala, mutton masala, chilli powder, corn flour and salt and boil for 10 minutes.
  • After that, add the fried mushrooms as well and set aside until thickened.
  • Serve with chopped onion and coriander.
